Piña Colada Cupcakes

It's no secret that we can't resist a well-made cocktail and one of our all-time favourites is the classic beach drink, Piña Colada. 
Close your eyes and you can almost taste the sea breeze & feel the sand beneath your toes...

You will need:

80ml Malibu/coconut rum
175ml coconut milk
60ml pineapple juice
185g flour
1 teaspoon vanilla
1 teaspoon baking powder
60g butter
200g sugar
3 eggs
185g crushed pineapple, drained
100g desiccated coconut

Combine the rum, coconut milk, pineapple juice and vanilla in a small bowl, set aside.
In a slightly bigger bowl whisk the flour, baking powder and a pinch of salt.
In a large mixing bowl cream the butter and sugar, then slowly add the eggs.




Once thoroughly mixed, alternately add the rum and flour mixtures to the large bowl, stirring well after each addition.


Fold in the pineapple and coconut.


Pour into cupcake cases and bake for 20 minutes at 200°C





  Important step: shake remaining coconut milk, rum and pineapple with a handful of ice to make a Piña Colada*

Once cooled, whip up a simple buttercream using butter, icing sugar and vanilla.
Sprinkle with the remaining coconut and serve to oohs and ahhs..
