Strawberry Sisters make: ICE CREAM SANDWICHES!

What would you say is your go-to sugary indulgence? Cupcakes? They're SO last year darling!
2013 is the year of the Ice Cream Sandwich. Yup, you read that right, the words ice cream AND sandwich in one happy calorific sentence.
You're most probably thinking 'have these strawberries gone crazy?' and although you'd be partially right, we don't mean those boringly dull bread sandwiches! Or even ice cream wafers, no no no! We're talking cookies, chocolate chip cookies to be more precise. Because let's face it, who doesn't want their ice cream squished in between two hunks o' crumbly love? Cookie monster, eat your heart out!

(makes 6-8 cookies)
100g softened butter
100g castar sugar
1 egg
175g plain flour
1/2 tbsp baking powder
1 bar of chocolate (your choice!)

Before you begin remember to preheat your oven to 200°C
Start by combining the butter together with the sugar until the mixture is light and fluffy.

Once this is completed, add in the egg and mix fully.

Next, sift in the flour and baking powder.

Take your desired chocolate and break up this up into your desired size (we like our chocolate chips visible from space in case you were wondering...)

Add these chocolate pieces to the bowl and mix throughly until the chocolate is evenly distributed throughout.

YUMMY YUMMY IN OUR TUMMY! Yes, in case you were wondering, we did eat this whole spoonful of cookie dough... 
Then place 6-8 scoops of said cookie dough on a baking tray.

And we may or may not have licked the bowl clean...

Leave the cookies to bake for about 15-20 minutes or until they start to turn golden brown. If you have a superhero strength of resistance, leave them to cool for five minutes.

Select the chosen few lucky cookies to flip over who have the important job of holding the ice cream.

When we say ice cream, we're not just talking about any old vanilla or chocolate.
When we're using ice cream as cookie superglue there's only one thing that's fit for the job... cookie dough! (haha geddit!)

Scoop a (generous) dollop of the ice cream onto each of the cookie bases.

Then place the second cookie on top to complete the best-sandwich-without-bread EVER!

Store in the freezer. Or eat straight away. Hmmm... scrap that, we recommend immediate consumption!
