Easterberry: Brunch

HAPPY EASTER 
to all you fellow strawbs out there!
now we know you're probably pretty busy eating all your choccies 
but we've got some fun stuff to share
now make sure you're sitting down
as we're about to let you in on some super sneaky recipes
that are both 
*drumroll*
temptingly tasty AND heavenly healthy
yep we're bringing out the big guns here
it is easter after all!

THE EASTER BUNNY VISITED

as you've all been good little strawberries this year

we thought that you could see some extra top secret 
piccies of our newly decorated dining room

our beverage of choice: juicey orange juice

because what's brunch without some OJ

we got that buffet feel going on

HELP YOURSELF

to start we made personal breakfast cups,
with layers of grapes, alpro yoghurt and raisiny museli

then onto a side of deliciously fresh and crisp salad

with lettuce, cucumber, celery, tomatoes, chicken, cheese and mayo

rather than normal sandwiches
(side note: who wants to be normal)
we used slices of baguette as the bread for our tuna mayo and cucumber sarnies

but then we got feeling EVEN MORE creative 
so decided to make some quinoa balls

we used:
1 cup cooked quinoa
1 large cooked and chopped chicken breast
1/2 cup cheddar cheese
1/4 cup of breadcrumbs
1 beaten egg
2 tablespoons flour
a pinch of salt

then all you have to do is combine everything in a large mixing bowl and 
scoop the mixture evenly out into a cupcake tray and 
cook for about 20 minutes

we just could not resist some sweet snacks too!
so popped some nutella along with our apple slices

and some scrummy teeny-tiny blueberry muffins

with perf-a-de-perf-perf flapjacks
that have the crispiest outsides and the gooeyest insides
 AND they're simple enough for even the silliest strawberry

you'll need:
250g butter
100g brown sugar
6 tablespoons golden syrup
500g oats
1 banana

whack out your biggest mixing bowl and place in your butter and sugar
melt these together over some boiling hot water
then add in the syrup, banana and oats and
MIX IT ALL TOGETHER
bake for around 15/20 mins or until the top gets nice and crispy

while you would think we were full 
we still managed to make room for some bunny tasting after
because that's what easter is all about
oh you know and some dude that came back from the dead
