Cacao and Coconut Bliss Balls

Bliss Balls do exactly what they say on the tin.
they provide pure bliss.
and these beaut bites are certainly no exception!
All you'll need is a food processor/blender-y thing 
(we just used a nutribullet - which btw is like totes our favvy gadget right now)

and the following goodies:
1/2 cup cacao nibs
3/4 cup desiccated coconut
1 cup dates
1 tbsp vanilla 
2 tbsp cacao powder
3 tbsp maple syrup (add even more to make them extra gooey!)

start by tipping half of the cacao nibs, coconut, dates, vanilla and cacao powder
into your chosen vessel along with a tablespoon of maple syrup

blend it all up until its all blended together. duh

then add in the rest of the coconut, dates, vanilla and cacao powder.

squeeze in another tablespoon of maple syrup with 1/2 of the cacao nibs that you have left

blend again.
until its blended. again.
then finally add in the rest of your nibs along with a final tablespoon of maple syrup

now for the fun part -
okay so not as fun as the actual tasting but still pretty enjoyable!

roll those sleeves up because its about to get messy
well... not really but its best to be prepared

grab a small amount of the mixture and roll it up real good with your hands
now the next step is optional but strongly recommended

roll some of your balls in extra coconut as it adds a nice bit of sumin sumin.
that something being a nice texture

before enjoying you have to take lots of photos

again we suppose this step is also optional

they taste okay... like not bad... kinda mediocre...

OKAY WE'RE TOTALLY LYING HERE THEY'RE SO BLIMMING AMAZING
they're uber chocolately and gooey and most of all... yummy

they last about 1-2 weeks in an airtight container
but they'll seriously go so quickly - talk about moreish!

so who said healthy food had to be boring!
no, but for reals. 
we want to know.
cos they were wrong.
oh-so wrong.
