you know how pancake day only comes around once a year?
not in the strawberry sister household!
we like to keep this delish treat close to our kitchens and stomachs at all times of the year.
now anyone can make a normal pancake
but it takes a special strawb to make one that's both
gluten free AND vegan
yeah that's right - we haven't forgotten about you guys
we've trialled out the perf recipe just for you
or if y'all just fancy a slightly healthier alternative
your four core ingredients are:
2 supery-doopery ripe bananas
1 cup almond milk
1 cup buckwheat flour (or any flour you particularly desire)
3 chia eggs -
but don't worry we'll explain all about this in a mo
just make sure you have some chia seeds handy
ok so one chia egg is basically one tablespoon of chia seeds
plus two tablespoons of water
so for this recipe you'll need
three tablespoons of chia seeds and six of water
stir it aaaaaallllll up
and it should go super combined and goopy
JUST LIKE A NORMAL EGG
clever eh?
you'll need to plop your chia eggs into a mixing bowl
along with your two bananas
then measure out a cup of the flour
and add that into the bowl as well
another cheeky cup - this time of almond milk
and guess what you do with that?
yep you guessed it
into the mixing bowl it goes
give everything a good whisk/mash/stir
until it's super thick and creamy
you can totally keep it plain and go straight onto cooking
but today we decided to go for a half chocolate, half vanilla stack
you know gots to be keeping it classic
so we split the batter in half
and folded in 3 tablespoons of cacao powder and a few cacao nibs to one
and some vanilla and cinnamon to the other
no one wants a sticky pancake
so grease that pan reaalll good
cook them exactly as you would any other pancake
p.s. we stuck ours on a medium heat
okay okay
so they may not have all ended up totally the exact same size/shape/colour
but that's what makes them so loveable
they're just so unique yo
you just can't not dribble them with maple syrup
and cos we're just so arty farty
we had to also plop on some cacao nibs (duh)
and some strawbs (double duh)

it's always recommended to take a cheeky selfie in between bites
the perfect breakfast-y dish
for when your boring old cereal/toast/oatmeal/whatever-you-eat-in-the-mornings
just isn't good enough
